Brownie Bites
This yummy recipe is a quick and more healthy alternative than its name sake.They are grain, egg and dairy free and could be made nut free by omitting the walnuts. For those following a Paleo Diet, they are also Paleo friendly.
Ingredients
105 g of pitted dates (approximately 8)
3 tbsp Unsweetened Cocoa Powder
1/4 cup walnut pieces
3 tbsp Unsweetened Flaked Coconut
78 calories each, 12g carbs, 3g fat and 2g protein
I combined the dates and cocoa in my Blendtec blender, you could use a food processor. Blended until dates are creamy. Then I added the walnuts and pulsed until incorporated. I then scooped the dough into a bowl and using my Pampered Chef small ice cream scoop I scooped balls and rounded them out. I placed the coconut on a plate and rolled the brownie bite balls into the coconut. Since there are no preservatives in these yummy treats and they are decadent enough to go a long way you will want to store the extras (if there are any) in an air tight container in the refrigerator.
